Connie Day

May 29, 1941 — December 15, 2025

Consuelo “Connie” Day, May 29, 1941 – December 15, 2025

Connie Day, beloved wife, mother, grandmother, great-grandmother, sister, aunt, cousin, dear friend and faithful servant of the Lord, passed away peacefully on December 15, 2025.

Connie was the devoted wife of Coley Day, with whom she shared 33 years of marriage marked by love, partnership, and unwavering devotion. She was the proud mother of five children: Diana Ashton (preceded her in death), Laura Jones (married to Ron), Cathy, Miguel, and Carlos Mascarenas.

She was blessed with eight grandchildren: Steven Ashton (preceded her in death), Lisa Wood, Danielle Mitchell, Mike Mascarenas, Ronny Jones (Sarah), Daniel Jones (Jamie), Ben Jones (Jenn), and Christopher Jones (Ivey). Connie was also cherished by nine great-grandchildren: Samantha, Allyssa, Joshua (preceded her in death), Anthony, Christian, Tanner, Steven, Simon, and Milo.

Born in Austin, Texas, Connie was the daughter of Florencio and Maria Briseno Bargas. She was one of eleven siblings. She was preceded in death by her brothers and sisters John Bargas, Eloise Cruz, Lucy Abeita, Mary Agnes Vasquez, Herlinda Hernandez, Henry Bargas, Josie Alvarado, and Albert Bargas. She is survived by her loving sisters, Rosie Villalobas and Cora Vargas.

Family and close friends were the center of Connie’s world. She took special joy in staying connected with everyone she loved—often spending hours on her cell phone. Her home was always open, and alongside her husband Coley, she welcomed family members, friends, and even strangers in need with open arms and open hearts.

Connie was legendary in many ways. She was a renowned lumpia maker, the undisputed queen of a tightly run tamale production line, and possessed impressive chancla marksmanship, as many who grew up under her roof can attest. While she often misplaced important items like cell phone, keys, IDs, and credit cards, she never once forgot a birthday. She loved to sing and faithfully serenaded loved ones during birthday celebrations.

Above all else, Connie loved the Lord. She lived her faith by loving others as Jesus did, and she prayed continually for her family. If you knew Connie, you were loved more deeply than you may have ever realized. She now rejoices in heaven, where she eagerly awaits the day she will reunite with those she loves to continue celebrating life together.
