In Loving Memory of Matthew “Matt” Ailstock
July 10, 1974 – October 1, 2026
With profound sadness, we announce that Matthew “Matt” Ailstock, 52, died unexpectedly at his home in St. Petersburg, Florida, on October 1, 2026, following a severe heart attack.
Born in Massachusetts, Matt moved with his family to St. Charles, Missouri at the age of six. There, he was raised by his devoted mother, Gail Ailstock, an elementary schoolteacher, and his beloved maternal grandmother, Mary Girdaukas, whose love, guidance, and sacrifices helped shape the man he would become. Later, Bill Wallace became his stepfather and an important part of his family. Their influence instilled in him a deep appreciation for hard work, kindness, loyalty, and the importance of caring for others.
A proud graduate of the University of Missouri (Mizzou), Matt developed a passion for sports at an early age that remained with him. He played and excelled in soccer throughout his grade school and high school years and continued competing in soccer leagues for many years thereafter. He was an avid sports fan who could always be counted on for a spirited discussion about teams, players, rankings, records, and statistics. Friends and family often marveled at his encyclopedic knowledge of sports and his ability to recall even the most obscure facts and figures. As a child, he proudly collected baseball cards, and as an adult, he built an impressive collection of sports bobbleheads, each reflecting his enthusiasm for the games and players.
Matt found joy in the stories and history behind the game. His favorite movie of all time was "The Natural," a film whose themes of perseverance, and pursuing one's dreams resonated deeply with him.
Matt dedicated more than 30 years to the hospitality industry. In 2002, he moved to Florida permanently and became a familiar face bartending at Kahunaville, Frenchy’s Rockaway Grill, the old Chic-A-Boom Room and The Venue before helping launch the original Back Bar. Through his friend John “Gilby” Gilbertson, Matt was introduced to Matt Geiger, who became not only his business partner but also a lifelong friend who believed deeply in him and his vision.
For over 14 years, Matt served as Managing Partner of the original “Back Bar”, where he became the heart and soul of a community gathering place. He believed hospitality was never simply about serving drinks, it was about serving people. He understood that bringing people together was at the center of a strong community, and he lived that belief every day.
Matt considered his staff family. He celebrated their successes, supported them through challenges, and took immense pride in their growth. To those who worked alongside him, he was far more than a leader. He was a mentor, protector, champion, and friend.
Matt always dreamed of owning a bar of his own and creating a place that fully reflected his philosophy of hospitality, community, and belonging. Together with Matt Geiger and Maryann Geiger, that dream became a reality with the opening of the new Back Bar on June 5, 2026. The new Back Bar stands as a testament to Matt's passion, vision, and the friendship and partnership that helped bring his lifelong dream to fruition.
Away from the bar, Matt found joy in gathering with family and friends, enjoying great food and even better wine, cheering on his favorite teams, and sharing stories. Many of those treasured meals were enjoyed at The Blu Halo, Courtside Grille, Bascom's Chop House and The Lucky Lobster.
In July 2026, Matt underwent full hip replacement surgery. True to form, he approached recovery with determination, optimism, and gratitude. He often expressed how blessed he felt to regain his mobility, return to the people he loved, and realize the dream of opening the new Back Bar.
For the past ten years, Matt shared his life with Rachel Jacobson, his loving partner and best friend. Together they built a life filled with love, laughter, and countless cherished memories. Rachel's unwavering love and support was his anchor, and their bond was a testament to the deep devotion they shared.
Matt is survived by his loving partner, Rachel Jacobson; his mother, Gail Wallace; his stepfather, Bill Wallace; his brother, Paul Ailstock, sister-in-law, Charity Ailstock, and their children, Jack, Grace, and Sarah; his beloved cat, Charley; his business partner and dear friend, Matt Geiger, and his wife Maryann Geiger; along with extended family, lifelong friends, the staff he considered family, and countless members of the community whose lives were enriched by his friendship.
The barstool may now sit empty, but Matt's spirit will forever live on in every shared story, every round of “healthy shots”, every great meal with friends, every game watched together, and every glass raised in celebration of a life that brought so much joy to so many. Cheers to Matt.
Matt will be deeply missed, forever remembered, and always loved.
