Constancia Bacod Apsay was born on September 19th, 1933 in Makati City, Philippines to her loving parents Juanito and Crisanta Bacod. She was the second eldest of nine children. As a child, she was very involved in school sports, especially track and field and softball. Her peers referred to her as “small but terrible Connie,” for how small and fast she was at running. She enjoyed fishing with her dad and took care of all her younger siblings. After graduating from high school, she initially wanted to pursue a degree in education, but life led her to a different route and she became a very talented seamstress. On January 10, 1960, she married her late husband Ludovico Apsay and soon after had three beautiful daughters Gertrude, Roselie, and Emelita. The Apsay family then moved to the United States in 1982 and settled in Seattle, WA where she then began working as a Certified Nursing Assistant. She began her career as a CNA at Parkside Retirement Community with her husband, then moved to Keiro Nursing Home where she eventually retired. Constancia’s main passion was her family, especially her 8 grandchildren and great grandson. She helped raise her grandchildren and was always there for advice and moral support. She always made sure to teach them the values of family and respect. She loved cooking and would always cook for every occasion, small or large. Her specialty was the Filipino dish Palabok, which was a staple entree at every event. She had the funniest personality and will definitely be remembered by her wittiness. She was also very loving and caring towards everyone she encountered. We will always cherish the loving memories we had with her, especially her contagious laugh, and most of all the wonderful joy and simplicity she brought to the world.
