As a young girl, she moved with her family from Texas to Southern California, where she spent much of her childhood.Carol married John Stoffel, and together they raised two children, John and Janet. Carol was a devoted stay-at-home mother while her children were growing up. In 1968, Carol and John moved to Novato, California, where Carol began a new chapter in her life. She had always been passionate about health and nutrition and began managing a health food store. She especially enjoyed helping customers and sharing her knowledge and advice about healthy living. After John and Janet graduated from high school, Carol and John moved to Martinez, California, so John could be closer to his work in Concord.
After John retired from Chevron, the two enjoyed their retirement together, including playing golf twice a week and spending quality time with one another. After much prayer and consideration, Carol made the move and quickly became an important part of their lives. She loved being with Janet, Steve, and the girls. About a year after Carol moved to Colorado, Janet passed away unexpectedly. Carol remained a loving source of support for Steve and helped care for Amanda and Samantha.
Her faith was an important part of her life, and she was actively involved in Bible studies, her church, and a widows’ group, where she formed meaningful friendships and connections.Carol had a special love for Estes Park and the Rocky Mountains. Whenever she had the opportunity, she enjoyed making the hour-long drive to Estes Park to take in the beauty and the peace of the mountains. She was also a devoted dog lover and shared her life with many beloved dogs throughout the years.
Four years ago, Carol chose to move to The Village in Greeley, an assisted living community. She quickly became a cherished member of the community. Carol loved living there, and the staff and residents loved her in return. She created many special friendships and enjoyed the care, companionship, and community she found there. Carol lived a life centered around family, faith, love, and service to others. She will be remembered for her caring heart, her love of animals, her strong faith, her generosity with her time and advice, and the many lives she touched throughout her 95 years.
